Product Procurement:
- Purchase from proven sources of reliable suppliers.
- Beef, Pork, Lamb and Veal will arrive from a narrow range of Midwest packers to guarantee a consistent, quality product.
Product Aging:
- Beef is held on an average of 28 days before processing to ensure optimum taste and texture.
- Veal is held on an average of 14 days before processing.
- Product is stored in a new state of the art refrigerated warehouse facility with a temperature range of 28-35 degrees Fahrenheit to maintain a wholesome product through the extended aging process.
Product Processing:
- Each muscle is hand selected for each order to match the finished portion size.
- A cut order is generated electronically for each line item on every order processed and matched with every customer detail required by each individual user.
- A graduated scale of weight tolerance is monitored:
- 0-8oz. - 1⁄4 tolerance
- 8-16oz. 1⁄2 tolerance
- 16oz. and up 1oz. tolerance
Product Packaging:
- Custom packaging for each order processed.
- Multiple variables, from piece counts per case, per package, cryovac or layer-pack to meet our customer’s particular needs.
- High performance multi-barrier, coextruded film is used to guarantee an extended shelf life from the packaging date, clearly labeled on each package.
- Multiple mold plates are utilized to specifically maintain the shape of the product in transportation and storage.
- Each box is also clearly labeled with product description, piece count, and portion size and production date.
