Balsamic Marinated Skirt Steak

Skirt Steak
Ingredients:
- 1/4 cup soy sauce or coconut aminos
- 1/4 cup balsamic vinegar
- 2 tablespoons rice wine vinegar
- 1 tablespoon brown sugar
- 1–2 tablespoons lime juice (about 1 lime)
- 4 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

Instructions:
- Add all the ingredients to a bowl and whisk gently until well combined. Yields a little over ½ cup.
- Add Linz Heritage Angus Skirt Steak to marinade and let sit at room temperature for at least 30 minutes or refrigerate for up to 2 hours. Bring the steak to room temperature and wipe off any excess marinade before cooking.
Tips for Cooking Skirt Steak:
Don’t Overcook: Skirt is a lean cut so it’s best to not cook it over medium-rare (130-135 degrees F)
Cook Over High Heat: Due to the lean nature of this cut, it’s recommended cooking over high heat, using either a cast iron skillet or on the grill. Cooking over high heat creates a beautiful crust while keeping the inside tender.
Let it Rest: Always let your steak rest for about 10 minutes. Allowing your steak to rest ensures the juices are absorbed throughout the entire steak, creating its signature juicy flavor.
Roasted Onion Horseradish Vinaigrette
Ingredients:
- 1 each egg yolk
- ½ cup sherry vinegar
- 1 tablespoon Dijon mustard
- 1 cup extra virgin olive oil
- 1 1/4 cup pomace oil
- 1 tsp kosher salt
- 1 cup medium diced onion
- ¼ cup prepared horseradish
- 1 teaspoon chopped fresh thyme
- 1 tablespoon brown sugar
Instructions:
- Place a sauté pan over medium-high heat. Add ¼ cup of the pomace oil and allow it to get hot.
- Carefully add the diced onions to the hot pan using a spoon. Cook over high heat until dark brown.
- Add the brown sugar and salt to the onions.
- Remove from heat and allow the onions to cool in the refrigerator.
- Once cooled, in a bowl combine the egg yolk, horseradish, sherry vinegar, and Dijon mustard. Whisk together.
- While whisking, slowly drizzle in the remaining oils (olive and pomace) until the mixture is emulsified.
- Using a rubber spatula, fold in the cooled onions and chopped thyme.
- Top over the marinate Linz Heritage Angus Skirt Steak
