The Top Butt and Sirloin Flap come from the Sirloin section of the cow. Top Butts have a small fat cap, a decent amount of marbling, and are ideal for grilling. The Sirloin Flap comes from the bottom of the Sirloin. These steaks are perfect for roasting or grilling and should always be sliced across the grain when serving.
